Dr. Bronner's Dishwasher Soap

****ALERT!!!!***** This recipe was awesome the first time I tried it. I thought I had struck gold! After a few days, it clumped up in the bottle and was diluted. My dishes were dirty. I will continue to experiment and keep you all updated. Comments welcome!


Your dishes will sparkle!!


Ingredients:

1/2 cup liquid Castile soap(Dr. Bronner's)
1/2 cup water
1 teaspoon fresh lemon juice
3 drops tea tree oil or thieves essential oil
1/2 cup white vinegar

Method:

Stir all ingredients together until blended. Store in a squirt top bottle. Use 2 tablespoons per load of dishes, shake well before use.

Christmas Eve Minestrone

I call this Christmas Eve Minestrone because I made it for our family to eat on Christmas Eve for lunch. It was warm and delicious, perfect for any winter day.

Ingredients

  • 12 cups chicken stock, homemade or store bought (free range is best), plus water
  • 1 (28-ounce) can organic diced tomatoes with their juices
  • 2 (15-ounce) cans white (cannellini or navy) beans, drained, OR two cups raw cannellini beans and 2 cups raw garbanzo beans soaked and boiled
  • 4 organic carrots, peeled and chopped
  • 4 organic celery stalks, chopped
  • 1 onion, chopped
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried sage
  • 2 bay leaves
  • Sea Salt and ground black pepper
  • 1 medium zucchini chopped
  • 2 cups coarsely chopped fresh or frozen organic spinach, defrosted

Directions

In a slow cooker, combine broth, tomatoes, beans, carrots, celery, onion, thyme, sage, bay leaves, and 1/2 teaspoon each salt and black pepper. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.OR combine all in your stock pot and let cook for 30 minutes to several hours.

Even Better Christmas Morning Cinnamon Rolls (Sorry Paula Deen)

Ok- so a friend mentioned she was making a recipe from The Pioneer Woman's website, and I just had to make these as well because they looked TOO good! Her recipe is here:

Ingredients

Pioneer Woman: My suggestions:

  • 1 quart Whole Milk- use raw milk
  • 1 cup Vegetable Oil- use coconut oil
  • 1 cup Sugar- use xylitol, raw honey or cane sugar (I tested out the raw honey in the dough, but not in the filling)
  • 2 packages Active Dry Yeast
  • 8 cups (Plus 1 Cup Extra, Separated) All-purpose Flour- use whole wheat or experiement with your favorite gluten free flours
  • 1 teaspoon (heaping) Baking Powder
  • 1 teaspoon (scant) Baking Soda
  • 1 Tablespoon (heaping) Salt- use sea salt
  • Plenty Of Melted Butter- use organic butter
  • 2 cups Sugar- use xylitol or raw honey or cane sugar
  • Generous Sprinkling Of Cinnamon
  • _____
  • MAPLE FROSTING:
  • 1 bag Powdered Sugar- use powdered xylitol or powdered cane sugar
  • 2 teaspoons Maple Flavoring (I did not use this, but I am sure you could use real maple syrup)
  • ½ cups Milk- use raw milk
  • ¼ cups Melted Butter- use organic butter
  • ¼ cups Brewed Coffee (I also did not use this)
  • ⅛ teaspoons Salt- use sea salt
  • * I use organic vanilla extract instead, and it tasted fine :)

Green Smoothies

Bored with breakfast? Give a green smoothie a try! Either for a healthy breakfast, a quick lunch or just for a mid-day snack, this smoothie will give you fuel for your day!

2 cups organic full fat plain yogurt (or coconut milk for dairy free)
1 cup raw milk (or almond milk for dairy free)
2 cups raw organic spinach
2 cups organic frozen fruit/berries- you choose, we love strawberries and mango
1 banana
1-2 tbsps Standard Process Whey Pro Complete**
1-2 tbsps Standard Process SP Complete Powder (with or without dairy)**

Blend all ingredients in your blender until smooth. You may add some raw honey or stevia for a sweeter smoothie.

Christmas Morning Cinnamon Rolls

    12 to 15 servings

Ingredients

Dough:

  • 6 tsps dry active yeast
  • 1/2 cup warm water
  • 1/2 cup scalded raw milk
  • 1/4 cup xylitol or cane sugar
  • 1/3 cup organic butter, melted
  • 1 teaspoon sea salt
  • 1 free range egg
  • 3 1/2 to 4 cups whole wheat flour

Filling:

  • 1/2 cup melted butter, plus more for pan
  • 3/4 cup xylitol or cane sugar, plus more for pan
  • 2 tablespoons ground cinnamon
  • 3/4 cup raisins, walnuts, or pecans, optional

Directions

Heat oven to 350 degrees F.

In a small bowl, dissolve yeast in warm water and set aside. In a large bowl mix milk, sugar, melted butter, salt and egg. Add 2 cups of flour and mix until smooth. Add yeast mixture. Mix in remaining flour until dough is easy to handle. Knead dough on lightly floured surface for 5 to 10 minutes. Place in well-greased bowl, cover and let rise until doubled in size, usually 1 to 1 1/2 hours.

When doubled in size, punch down dough. Roll out on a floured surface into a 15 by 9-inch rectangle. Spread melted butter all over dough. Mix sugar and cinnamon and sprinkle over buttered dough. Sprinkle with walnuts, pecans, or raisins if desired. Beginning at the 15-inch side, role up dough and pinch edge together to seal. Cut into 12 to 15 slices.

Coat the bottom of baking pan with butter and sprinkle with sugar. Place cinnamon roll slices close together in the pan and let rise until dough is doubled, about 45 minutes. Bake for about 30 minutes or until nicely browned.

Simple Balsamic Vinaigrette

Ingredients

  • 1/4 cup organic balsamic vinegar
  • one small pinch stevia (you can always add more later)
  • 1 tablespoon chopped garlic, or 1 1/3 tsp garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 3/4 cup olive oil

Directions

Beat the vinegar in a bowl with the optional sugar, garlic, salt and pepper until sugar and salt dissolves. Then beat in the oil by droplets, whisking constantly. (Or place all the ingredients in a screw-top jar and shake to combine.) Taste and adjust the seasonings.

Christmas Ginger Snaps


Hubby's favorite.... got to make them every year! :) I think these would taste great (and look great) with a drizzle of white or cream cheese frosting... maybe even maple... does that sound weird? Well, enjoy!

Ginger Snaps

3/4 cup soft coconut oil
1 cup organic brown sugar or sucanat
1/4 cup molasses
1 free range egg
2 1/4 cup whole wheat flour
2 tsps baking soda
1/2 tsp sea salt
1 tsp cinnamon
1 tsp ground ginger
1/2 tsp ground cloves

Cream coconut oil and sugar/xylitol. Stir in molasses and egg. Add one cup flour, baking soda, salt, cinnamon, ginger, cloves. Add remaining flour. Chill dough in freezer for 15 minutes. Shape dough into 1 inch balls and bake on greased (grapeseed oil spray) cookie sheet at 375 degrees for 8-10 minutes.

My Grandma's Favorite Sesame Seed Cookies


I make these every Christmas because they are my 86 year old Grandma's favorite. In fact, she gave me the recipe. They are a pain in the butt but look gorgeous! :) Grandma is worth it. This recipe makes a ton of cookies, you may want to cut it in half. Thanks to my friend Cynthia for helping with these today!

Sesame Seed Italian Cookies

2 cups organic cane sugar or xylitol
2 cups coconut oil
6 free range eggs
1 cup raw milk
8 tsps organic vanilla extract
8 cups whole wheat flour
12 tsps baking powder
sesame seeds

Cream sugar and coconut oil. Add eggs, milk and vanilla. Add flour and baking powder. Make dough soft in your hands, rolling into your desired shape. Dip in milk and roll in sesame seeds. Bake at 425 degrees for 5-8 minutes or until lightly browned.

Turkey Tetrazzini


Do you have leftover turkey from Thanksgiving? Try this yummy dish :) Can be gluten free! I guess it should be categorized as "easy" if I can make it with an 8 month old on my hip?

1 tsp grapeseed oil
10 ounces sliced organic white mushrooms (optional)
1 onion, chopped
1/2 tsp each sea salt and pepper
3 tbsps whole wheat flour or tapioca starch for gluten free
2 1/2 cups free range chicken broth
1 cup raw milk
2 cups cooked organic turkey
1 package organic frozen peas
1 package wheat or rice pasta

Heat oil over medium heat. Cook onions and mushrooms until tender. Add seat salt and pepper. Add flour or starch and stir. Add broth, mixing for a few minutes and add milk. Mix in peas and turkey and heat until warm. Serve over cooked pasta.

How To Make Your Own Shampoo


Ok... homemade shampoo? I know what you are thinking! I searched and searched for a recipe online for a homemade shampoo that didn't involve washing your hair with one thing, then spraying it with apple cider vinegar... ick. I found this- and after a long search for glycerin (which I stumbled upon without trying at Tops), I gave it a try. My husband loves it. I am not a huge fan :) Seemed too greasy for me, but hey, you might like it. He likes it, and I'll continue to make it for him. It only took 5 minutes.

1/4 cup of castile soap- Dr Bronners
1/4 cup distilled water (or just regular purified water)
1 tsp olive oil
1 tsp glycerin

Mix in an empty bottle and shake lightly :)

Almond Squares, Christmas recipe #4!


Almond Square- another one of my Aunt's famous recipes! :)

2 sticks of melted butter (I used organic)
3 eggs (free range is best!)
2 tbsp Almond extract (pure)--- oops I thought it said tsp when I made mine and it turned out great still!
2 cups sugar (I used 1/2 cup raw honey and 3/4 cup cane sugar)
2 cups flour (I used whole wheat)
Sliced or chopped almonds

Mix first four ingredients by hand. Fold in flour. Pour into a 9 by 13 baking dish (greased with grapeseed oil spray). Sprinkle with almonds and powdered cane sugar. Bake at 350 degrees for 30 minutes. Brown top under broiler (oops I forgot this step too!) for approximately 3 minutes. Keep a close eye on it so you don't burn it!!

I was thinking this base would be fun to experiment with- maybe lemon extract in place of almond topped with walnuts and cranberries? Or fold in some apples and cinnamon... just thinking out loud. :)

Meatball Cookies, Christmas Cookie #3!

When I got married, my Aunt gifted me a pizzelle maker and a homemade recipe book full of all our favorite (and her famous!) Christmas cookies! Every year, we indulge! I would like to share a few with you, starting with these delicious chocolate meatball cookies. Alter them to your liking- I cut down on the sugar a little for mine.

Meatball Cookies

3 cups flour (I used whole wheat)
1 cup sugar (I used 1/4 cup cane sugar and 1/2 cup raw honey)
1 cup cocoa
1/2 cup oil (I used coconut)
1 cup milk
1 tsp cinnamon
1 tsp allspice
1 tsp baking soda
1 tsp baking powder
1 cup semi sweet or dark chocolate chips

Mix oil and sugar. Add cocoa and mix again. Add milk and dry ingredients, mix and add chocolate chips. Roll into meatball shapes. (Make sure you cover all of the chocolate chips with cookie dough) Place onto lightly greased (grapeseed oil spray) cookie sheet and bake at 350 degrees for about 8 minutes. Glaze when cool, if desired.

Glaze: Mix 2 cups confectioners sugar (you can use organic powdered sugar) with 1 tsp vanilla. Add enough milk or water to make glaze of spreading consistency.

*They sure look nicer when frosted, but certainly don't need it as they are so yummy just by themselves!

Homemade Raw Milk Mint Chocolate Chip Ice Cream


We love making homemade, healthy ice creams in our Cuisinart Ice Cream Maker that was gifted to us! This recipe is super yummy, and fun for this time of year too!

2 cups organic heavy cream, well chilled
1 cup raw milk, well chilled
3/4 cup organic cane sugar or xylitol
2 teaspoons vanilla extract
2 teaspoons mint extract
1/2-3/4 cup cup chopped dark chocolate chunks

Turn ice cream maker on and pour each ingredient in through the top spout. Let churn for 15-20 minutes, and freeze until solid.

1/2 cup organic sour cream
1/2 cup mixed herbs, such as, parsley, chives and dill
1/3 cup grapeseed oil vegenaise
1 tbsp. apple cider vinegar
1/2 tsp. sea salt
1/8 tsp. cayenne pepper
12 oz organic cream cheese, room temperature
Assorted vegetables, such as, baby carrots, sliced bell peppers, cucumbers
In blender, process sour cream, herbs, vegenaise, 2 tablespoons water, vinegar, salt, and cayenne pepper until smooth and pale green. Cut cream cheese into chunks. Add to blender, one at a time, processing until smooth. Transfer mix to serving bowl. Serve with fresh vegetables.

Cranberry Walnut Apple Bread- Whole Wheat


Cranberry Walnut Apple Bread
  • 16 Servings
  • Prep: 10 min. Bake: 1 hour + cooling

Ingredients

  • 1-1/2 cups whole wheat flour
  • 3/4 cup raw honey
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 2 free range eggs
  • 2 tablespoons coconut oil
  • 2 cups chopped peeled tart organic apples
  • 1 cup fresh or frozen cranberries
  • 1/2 cup chopped walnuts

Directions

  • In a large bowl, combine the flour, baking powder, cinnamon, baking soda and salt;. In a small bowl, whisk eggs, honey and oil. Stir into dry ingredients just until moistened (batter will be very thick). Fold in apples, cranberries and walnuts.
  • Transfer to an 8-in. x 4-in. loaf pan coated with grapeseed oil spray. Bake at 350° for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Yield: 1 loaf (16 slices).

Raspberry Shortbread Thumbprints, Christmas Cookie #2!


Raspberry Shortbread Thumbprints (a favorite in our house!)

2/3 cup of organic cane sugar
1 cup softened organic butter
1/2 teaspoon organic vanilla extract (why I use organic vanilla- because non-organic contains a lot of EXTRAS. Check next time you buy, you'll see!)
2 cups unbleached white wheat flour
1/2 cup organic raspberry fruit jam (or other fruit)

Preheat oven to 350 degrees, spray cookie sheets with grapeseed oil spray. Beat sugar, butter and vanilla in a large bowl. Add flour and mix well. Shape dough into 1 inch balls. Place balls 2 inches apart on cookie sheets. Make thumbprints in each ball and fill with 1/4 teaspoon jam. Bake for 12-15 minutes or until edges are slightly browned.

Dark Chocolate Mint Crinkles, Christmas Cookie #1!


  • 1 cups whole wheat flour, 1 cup unbleached white wheat flour
  • 1 cup unsweetened dark cocoa powder
  • 1cup organic cane sugar
  • 1/3 cup raw honey
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup coconut oil
  • 4 free range eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon mint extract
  • 1/2 cup organic powdered sugar
  1. In a medium bowl, mix together cocoa, sugar, honey and oil. Beat in eggs one at a time, then stir in the vanilla and mint. Combine the flours, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 2 hours.
  2. Preheat oven to 350 degrees F (175 degrees C). Spray cookie sheets with grapeseed oil spray. Roll dough into one inch balls. Coat each ball in powdered sugar before placing onto prepared cookie sheets.
  3. Bake in preheated oven for 10 to 12 minutes.

For The Love of Christmas Cookies :)


Don't you just love Christmastime?! This year my baking goals are at least 4 different kinds of Christmas cookies, converted to healthier versions. Christmas is just about the only time of year I use sugar and don't care about it (well, cane sugar).... I haven't yet been able to stock up with bulk xylitol, and spending $9/lb at our local grocery store just isn't going to happen this year. So can sugar it is. And raw honey too, of course. Anyway, it's hard for me to say no to sweets this time of year (I sure wish I had when I get sick in January... ) :) so I'll just make a few "healthier" versions of some of our favorite cookies. Brittany's Sweet Potato Shepherds Pie

This dish is very yummy and very creative! We loved it! I even used organic ground turkey in place of beef, and organic chicken broth in place of the wine (because I didn't have those two things on hand) and it worked beautifully. My one permanent change is the earth balance butter, I prefer not to use that, so I just use real organic butter :) You could use coconut oil if you needed it dairy free!

Dark Chocolate "Picnic Cake"


I made this cake yesterday on a whim. It was a Hershey's recipe, that I converted. My best friend approved of it, (not knowing it was healthier) :) and if you knew her and her sweet tooth, you'd know that that says a lot! We thought it was delicious. I think it would taste great using extra extracts in the cake and/or the frosting too, such as mint or maybe some peanut butter frosting. :) Here's the recipe for a "healthier" chocolate cake:

1 cup dark chocolate chips
1/2 stick organic butter
1 1/3 cups boiling water
2 1/3 cups whole wheat flour
3/4 cup raw honey
1/2 cup organic sour cream
2 free range eggs
2 teaspoons baking soda
1 teaspoon sea salt
1 teaspoon organic vanilla extract

Heat oven to 350 degrees. Prepare baking pan (with grapeseed oil spray)- I used a bundt pan for fun! Combine chocolate chips, butter and water in your mixing bowl; stir with a spoon until chocolate is melted and mixture is blended. Gradually add flour, honey, sour cream, eggs, baking soda, salt and vanilla; beat on low speed of electric mixer until smooth. Pour batter into prepared pan. Bake for 30-40 minutes (depending on your pan), until a toothpick comes out clean. Cool and frost.

Dark Chocolate Frosting

1/2 stick organic butter
1 cup dark chocolate chips
1 1/2 cups powdered xylitol or powdered organic cane sugar
1/4 cup raw milk
1/2 teaspoon organic vanilla extract

Place butter and chocolate chips in a pan and heat to medium low heat until melted, stirring almost constantly. Place remaining ingredients in a glass mixing bowl. Pour chocolate mixture into bowl and beat until smooth. Refrigerate 15-20 minutes if needed before frosting cooled cake.

Homemade Baby Wipe Solution

This is a recipe you can use with cloth wipes, or make your own disposable wipes with it and paper towels or something similar. It works great!

2 cups purified water
2 tablespoons olive oil
2 tablespoons baby soap (such as Burts Bees or Dr Bronners works well too)

or

2 cups purified water
2 tablespoons olive oil (etc)
several drops tea tree essential oil

I mix the ingredients together in my squirty bottle (an old seventh generation dish soap bottle) and shake. So simple and easy. I know what is in it, and what is going on my baby's skin. Just shake before use, and squirt onto cloth wipes. You can also pour it over your wipes/paper towels in an old wipe tub, dispensing as needed. Just be sure to check for mold often.

Homemade Laudry Soap

My experimenting lately has been with personal care and home care products. I got this fabulous Dr. Bronner's soap, and this is just one of the zillion things you can do with it. I love the way it smells! (I used the almond scented soap)

Homemade Laundry Detergent

Recipe adapted from Green Clean by Linda Hunter

1 cup castile liquid soap (Dr. Bronner’s or Mountain Rose Herbs are good choices as they are organic and main ingredients are coconut oil & olive oil) OR Dr. Bronner’s Sal Suds
2 cups water
1/3 cup salt
1 cup baking soda or washing soda
vinegar

Warm the salt and baking soda in water until mostly dissolved. Transfer to a one gallon container. Add your soap fill the rest of the jar with water, this giving you 1 gallon of detergent. Use 1/4 -1/2 cup per load, depending upon how dirty the load is. Add a tablespoon or two of vinegar to your wash during the rinse cycle. This works as an effective fabric softener and disinfectant. Depending upon the hardness of your water, you may want to decrease the water quantity or increase the soap quantity.

Please note: do not add essential oils to your detergent. These oils will break down the fiber in your clothing. If you want a particular fragrance, try putting a few drops of essential oils on a rag and throwing it in the dryer. This will add fragrance but not transfer to your clothing.

Review: This recipe does clean very well, although I was not impressed by the cleaning job it did on my cloth diapers. Hard to give an exact price calculation on this one, but I figured this recipe makes enough detergent for 64 loads (at 1/4 cup per load) and with the ingredients costing no more than $4.00 (on the generous side), your total cost is most likely less than $0.06 per load

Homemade Toothpaste

Yes, I said it- Homemade toothpaste! Buying fluoride free toothpaste can be expensive. We ran out, and I realized after looking at this recipe that I already had all of the ingredients. So I gave it a try. For a homemade toothpaste, it's not half bad! Give it a try. And just a tip, xylitol is a great sweetener for toothpaste, because it is actually really good for your teeth anyway!

PESTO!


Fresh Basil Pesto Recipe

Ingredients

  • 2 cups fresh basil leaves, packed
  • 1/2 cup freshly grated Parmesan-Reggiano or Romano cheese
  • 1/2 cup extra virgin olive oil
  • 1/3 cup pine nuts or walnuts (I used walnuts)
  • 3 medium sized garlic cloves
  • Sea salt and freshly ground black pepper to taste

Method

1 Combine the basil in with the pine nuts, pulse a few times in a food processor. (If you are using walnuts instead of pine nuts and they are not already chopped, pulse them a few times first, before adding the basil.) Add the garlic, pulse a few times more.

2 Slowly add the olive oil in a constant stream while the food processor is on. Stop to scrape down the sides of the food processor with a rubber spatula. Add the grated cheese and pulse again until blended. Add a pinch of salt and freshly ground black pepper to taste.

Makes 1 cup.

Serve with pasta, or over baked potatoes, or spread over toasted baguette slices. Yummy!

Frugal Soups!

It's been a pinching pennies kind of month over here with my husband's business opening soon. These two soups have been a great way for us to eat a healthy, fast, inexpensive meal. Plus, they are perfect for this fall weather we are having!

Boil 2 cups split peas or red lentils with about 6 cups purified water.
Add sea salt, pepper, garlic powder and chives to taste.

Done! :)

Homemade Granola Bars

Making your own granola bars is one of those "throw whatever you have on hand in" type of recipe! Here's one that I did:

GRANOLA BARS
3 cups oats
1/3 cup organic raisins
1/3 cup dried organic cranberries (watch out for added sugars and hydrogenated oils)
1/3 cup dried cherries (same)
1 1/4 cup nuts (any kind), chopped
3 tbsps flax seed
3 tbsps sesame seeds
3 tbsps sunflower seeds
6 pitted and chopped dates
1/4 cup raw honey
1/4 cup molasses
1/2 cup sucanat
1/2 teaspoon cinnamon
1 free range egg, beaten
2/3 cup organic butter or coconut oil
1 teaspoon vanilla

Making the Granola:
Add all ingredients to a large bowl, mixing well.

Press firmly into a 15"X10" glass pan which has been generously sprayed with grapeseed oil spray.

Bake at 350°F for about 20-30 minutes, or until lightly browned along edges. Cool. Cut into bars. **Mine did not stick together well after sitting for one day. I think if you refrigerated them, they would stick better right away.

It's possible to make a double batch for granola cereal two ways; before adding the honey, remove half of the mixture and store in refrigerator to be used as breakfast cereal, or combine all ingredients and toast in oven on a baking sheet, using a spatula to mix/turn. Proceed with remaining mixture as above to make the bars.

Coconut Flour Apple Muffin HEAVEN!

Best coconut flour recipe I have tried yet! Easy and delicious. And I loved that I didn't have to change any ingredients- it was already healthy! :)

Preheat the oven to 375 degrees. Prep the muffin tins. I suggest using muffin papers (baking cups), otherwise you can grease it.

Dry Ingredients:

    1/2 cup of coconut flour
    3/4 teaspoon baking powder
    1/2 teaspoon medium grind sea salt (if you use fine, use 1/4 teaspoon)
    1 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon ground cloves

In a medium size bowl combine the dry ingredient and briskly whisk until all lumps are removed.

Add:

    1/3 cup of coconut oil
    1/4 cup of honey

Melt together on the stove top, just until melted (don’t get it hot, otherwise it could cook your eggs prematurely).

And:

    3 eggs, lightly whisked.

Whisk until everything is well combined, and then add:

    3/4 cup of shredded apples (wash, and core the apples, and then shred, peel and all)*see note above*

Divide between ten muffin tins, and bake for about 25 minutes or until the tops are lightly browned and a toothpick comes out clean when poked in the middle of the muffin.

Allow to cool for a few minutes and take out of the muffin tins and serve!

Dairy Free Chicken Rice and Broccoli Casserole!


Chicken Broccoli Casserole*

3 cups cooked brown rice**

6 cups cooked diced organic chicken

1 cup grapeseed oil vegannaise

3 cups white sauce (recipe below)

1/8 cup lemon juice

2 -14 oz. bags of organic broccoli (thawed)

1 cup bread crumbs*

Cook rice and chicken, set aside. In the same pan the chicken cooked in, make white sauce:

White sauce

1 half onion, chopped

3 tablespoon grapeseed oil

3 tablespoons tapioca flour

2 cups organic chicken broth*

1 cup plain flavored almond milk

1-2 tsps sea salt, 1tsp garlic powder and 1 tsp pepper

Saute the chopped onion it the oil until tender. Add the flour and cook for about a minute letting it bubble. Slowly add the chicken broth while stirring constantly. Add almond milk. Season with salt, garlic powder and pepper to taste. Adding a clove of garlic with the onions gives the sauce a nice flavor too.

Add vegannaise and lemon juice to white sauce. Grease a 9 x 13 pan using grapeseed oil spray. Add rice to the bottom of the pan and spread out evenly. Next add a layer of broccoli over the top of the rice. Spread half of the sauce over the broccoli, then add the chicken, 2nd half of broccoli and the other half of the sauce. Sprinkle with bread crumbs. Bake at 350 degrees for about 30 minutes or until browned and bubbly.

*Make this recipe gluten free by using gluten free broth and bread crumbs.

**Easy time saver tip: Anytime you cook rice, make double and freeze extras for another recipe.

Gluten Free Blueberry Muffins

Coconut flour is new to me, but I am having fun experimenting with it. This recipe is from elanaspantry.com and I thought was worth sharing. It is especially good with coconut oil spread on top :) I would even use coconut oil in the recipe in place of the grapeseed oil.

Who Needs Manwich Anyway?!


So easy from scratch sloppy joe's that you will be sure to love!

Ingredients

    1lb ground bison, organic ground turkey or organic ground beef
    1-2 Tbsp grapeseed oil
    1onion diced
    1 cup organic ketchup
    1/3 cup purified water
    2Tablespoons Braggs apple cider vinegar
    2tablespoons Sucanat
    2tsp mustard
    2tsp garlic powder
    sea salt and pepper to taste.


Directions

Brown ground meat with chopped onion and grapeseed oil.
add remaining ingredients, stir and let simmer for 15-20 min.
serve on buns or bread or just eat plain. yum!

Homemade Fudgesicles!


Prepare yourself for melt in your mouth yummy goodness!!! These fudgesicles have a small story behind them: I have had several people mention to me lately about using avocado as a great base for raw desserts. I am all about avocado, so I decided to give a dessert a try. I did an avocado-chocolate-coconut cream popsicle. Not our favorite! Nothing like an avocado pop right? Well, just wasn't my cup of tea. I will definitely try more raw desserts using avocado, but these popsicles needed another try. Enter, fudgesicles! So basically I just took out the avocado, and added some extra goodness. Now we are talking. Now I am pleased with my result!!! :)...........ok ok my sweet friend Christy reminded me today that I forgot to add the dates. Whoops!!! So we can't rule out avocado fudgesicles just yet! ;)

1 can organic coconut milk (very creamy brand such as Thai)
1/2 cup cocoa
1/4 cup raw honey
1 tsp stevia
1 tsp vanilla extract

Blend in your blender until mixed. Pour into your popsicle molds and freeze :)

Extra add ins:

For chocolate peanut butter pops add about 3 good size tablespoons organic peanut butter and blend.

For a minty treat, add 6-8 Newman's Own Organic Newman's O's Mint cookies and blend. (These contain organic sugar)

Each recipe makes 6-8 fudgesicles.

A Year of Changes....


WOW. Has it really been a year of posts already? One year ago I began this blog, to sort of document the changes we were making as a family. How far we've come! It feels great. As we begin another year of healthy changes, and experience the beginning of Restoration Wellness, these are some of things our family is focusing on:

~Gluten free recipes to reduce inflammation in our bodies, experimenting with coconut flour and almond flour more often.
~Dairy free recipes for the same reason, experimenting with coconut milk and almond milk more often. NOT using soy products in place of dairy.
~More natural and organic personal products.
~Homemade household cleaners using 'yummy' essential oils!

We're super excited to begin a new phase in our healthy living journey.

Coconut Curry With Chicken

Yesterday I came up with this recipe. It was SO yummy, it will be a new staple meal around here.

1 can organic coconut milk (I like Thai brand because it is so creamy)
1 package organic chicken breasts (cut up) or tenders (about 3-4 breasts, 8 or so tenders)
1 red bell pepper, 1 green bell pepper, sliced
1 onion, sliced
1/2 a bag of frozen peas and carrots
3 Tbsps Coconut Oil
2 Tbsps San J Tamari
3-6 Tbsps Curry powder- depending on how you like it
Sea Salt
Garlic Powder
Curry Powder
Quinoa or Brown Rice

In a large skillet, melt coconut oil. Add veggies and saute for a few minutes. Add chicken pieces. Sprinkle chicken with sea salt, curry powder and garlic powder. Cook for about 2-3 minutes then flip. Season again with spices and cook 2-3 minutes.
Pour coconut milk over chicken and veggies. Mix in Tamari and Curry powder and another teaspoon of sea salt. Simmer for a about 10 minutes and serve hot over Quinoa or Brown Rice.

Loose Leaf Tea- My New Love!


My mother in law has gotten me hooked on making iced teas using loose leaf tea. Ever try it? It is super easy. I love fruity teas, such as a passion fruit blend or blueberry rooibos. Steep your tea, add some raw honey, stevia or xylitol (or a mix!) add your water and chill.

What a perfect refreshing summer drink!

Homemade Popsicles


This summer we've made some yummy homemade popsicles, as they are a favorite of any child! Most recently, we made Strawberry Coconut Popsicles. Great dairy free option.

My daughter also loves this creation:

Makes 4 small popsicles

Mix together in a cup:
About 2-3 Tbsps organic lemon juice
About 2-3 Tbsps organic lime juice
1 tsp stevia
2 cups water

Mix together; taste and adjust to your preference... this recipe is just a guide for you.
Pour in your molds and freeze until solid.

We have recently found popsicle molds with straws attached and are super excited!

Dairy & Egg Free Fudgy Cookies (No Bake)


"Fudgy" No Bake Chocolate Oatmeal Cookies (Vegan, Soy-Free, Wheat-Free) PDF Print E-mail
Try mixing the flavor up by substituting carob powder for the cocoa or almond butter for the peanut butter!

Serves: 12

Ingredients:

2/3 cup raw honey or real maple syrup or a combo of both
1/4 cup coconut oil
5 tablespoons unsweetened cocoa powder
1 teaspoon ground cinnamon
1/2 cup organic peanut butter
1 cup rolled oats
1 teaspoon vanilla extract

Directions:

In a saucepan over medium heat combine the honey or maple syrup, oil, cocoa and cinnamon. Boil for three minutes, stirring constantly. Remove from heat and stir in the peanut butter, rolled oats and vanilla until well blended. Drop by heaping spoonfuls onto waxed paper and chill to set, about 30 minutes.

Homemade Tortillas


It is sometimes hard to find good-quality tortillas without the added bad oils. Generally, I buy Ezekiel brand, but they can be expensive. So when my mother in law started making these tortillas, I decided to give it a try. They were super easy and very tasty.

Flour Tortillas (Makes 8)

2 cups flour; my MIL uses a white/wheat, we used whole wheat (soft white milled at home). Both work great, but the whole wheat were a little more hearty, naturally.
1/4 cup organic butter, melted
1/4 cup grapeseed oil
3/4 cup warm water
1 tsp sea salt

Mix all the ingredients and knead dough for about a minute. Divide dough into 8 balls. Heat up a heavy frying pan, cast iron is best, over medium heat. No need to oil the pan. Sprinkle some flour on a clean counter top and roll each ball into a flat circle about 6 inches in diameter. Place one at a time in the frying pan, cooking only on one side until you see bubbles popping up all over the top of the tortilla. Take it off the heat and wrap in a clean dishtowel as you cook the rest.

Pair it up with some taco meat and don't forget your avocado! ;)

Delicious Iced "Coffee" Beverages!


Ok- this is my newest favorite find. Dandy Blend. It is a coffee substitute, made from the totally water-soluble extracts of three roasted herb roots: dandelion, chicory and sugar beet- and two roasted grains – barley and rye. It is super yummy! And a body cleanser! We tried it recently in this latte style drink (recipe thanks to our friend Amber W!):

Dandy Blend Lattes

3/4 cup boiling water
3 tsp Dandy Blend
1/2 cup organic heavy whipping cream
1 1/2 tsp vanilla extract
1 tsp Global Sweet Xylitol
1/4 tsp Stevia
Ice cubes

Makes one serving. Pair it with Double Tree Inn cookies and you are in heaven.

Super Light But Filling Lunch


Guacamole + pinto beans + tomatoes scooped up with raw veggies or corn chips = yummy!

Not your typical lunch, but still great and healthy.

Guacamole:

2 avocados
1 garlic clove
sea salt
pepper
lime juice

Mix together.... and just throw some pinto or black beans on top with fresh organic tomatoes (add some cheese too if you want) and eat with good quality corn chips (watch for MSG!) or raw veggies, or Mary's Gone Crackers (these are gluten free) and enjoy!

Sauteed Chicken, Salad and Homemade Ranch Dressing!



Make a salad with whatever you have on hand/is in season (lots of veggies and good greens!)

Saute some free range chicken breast or cutlets in grapeseed oil, sea salt, pepper, dill, paprika, onion powder, garlic powder and parsley, cooking several minutes on each side. Serve cooled chicken over your fresh salad and top with this homemade dressing:

Homemade Ranch Dressing:

1 1/2 Cup Grapeseed Oil Veganaise
3 Tablespoons organic almond milk
1/2 Teaspoon Parsley
1/4 Teaspoon Garlic Powder
1/2 Teaspoon Onion Powder
1/2 Teaspoon Dill
1/4 Teaspoon Sea Salt
1/2 Teaspoon Chives
1/4 Teaspoon Apple Cider Vinegar
1/2 Teaspoon San-J Tamari Sauce (wheat free, organic)
1/4 Teaspoon of lemon juice
About an 1/8 tsp stevia

Wisk together and refrigerate for a while before serving.

Pecan Crusted Cod


4-6 wild caught cod fillets (Alaskan is great)
1 cup or so of ground pecans (walnuts would probably work ok too)
1 cup coconut flour
raw honey
grapeseed oil

pour some raw honey in a dish and add a small amount of water. In a separate dish, mix nuts and flour. Place cod fillets in honey, then in nut mixture and cover as best you can using your fingers to "smoosh" the nuts on the fish.
Heat a skillet over medium heat with grapeseed oil covering the bottom. Place cod fillets in heated oil and fry on each side for a few minutes.

Once served, drizzle your piece of fish with raw honey and enjoy!

Sauteed Zucchini:

Enjoy your in season zucchini with this super easy recipe. Chop zucchini, and saute in grapeseed oil, sea salt, pepper and turmeric. Yum!

Salmon Marinade

This marinade was so good, I plan to try it with chicken drumsticks!

4 wild caught Alaskan salmon fillets
4 tbsps sucanat
4 tbsps balsamic vinegar
2 tbsps grapeseed oil
2 garlic cloves, minced or 2 tsps garlic powder
1/2 tsp pepper
1 tsp sea salt

Mix ingredients together and pour over salmon. Marinade in fridge for 30 minutes. Bake at 450 degrees for about 10 minutes, using a turkey baster to keep the sauce on the fish. :)

Farmer's Market Soup

A detox my hubby is on plus a trip to the farmer's market equals this soup :)

3-4 cups navy beans soaked overnight in water
2 zucchini, chopped
1 onion, sliced
2 organic tomatoes, chopped
one bunch green onions, chopped
3 organic celery stalks, chopped
1/2 kohlrabi, skinned and chopped
4 cups vegetable broth
1/2 cup organic tomato puree
sea salt
basil
garlic powder
onion powder

Mix everything together in your stock pot or crock pot and cook for several hours until the beans are cooked. :)

These are a few of my favorite things.....

Changing ingredients in recipes to make them healthier can be tricky. Here are some of my favorite healthier alternatives:

White sugar- My favorite thing to use in place of it is Xylitol (same amount as the sugar & make sure you get a brand that is not chemically processed! Xylitol made from birch tree is super great! We like the brand Globalsweet) or raw honey (slightly less than the sugar)

Canola oil- grapeseed oil or coconut oil

Shortening- coconut oil

Margarine or vegetable spread- real butter

Brown sugar- sucanat

Soy sauce- San-J wheat free Tamari

Mayo- grapeseed oil veganaise

Enriched white flour- whole wheat flour or coconut flour

White rice- brown rice or quinoa

Chocolate for eating or baking- 60% cocoa dark chocolate

Soda- Zevia stevia sweetened soda

Chicken Soup For Your Soul!


10 free range organic chicken drumsticks
1 bag organic carrots, chopped
6 celery stalks, chopped
1 onion, chopped
frozen peas and corn
4 cups organic free range chicken broth
3-4 cups water
sea salt
pepper
garlic and onion powder

Place everything in your crock pot and cook on low all day. Once cooked, remove chicken and remove meat. Place meat back into crock pot. Season and serve. :)
My husband requests this soup every time he is sick. :)

A New Favorite Treat of Ours


We had this for the first time yesterday. It was amazing. Need a treat once in a while? Try Coconut Bliss 'Ice Cream'!!! It's made with coconut milk and is all organic. Try it! YUM!

More on Agave Syrup...

OK, so I am hearing more and more about this controversial sweetener. My understand is, that when this was first introduced, it was in fact a good alternative to table sugar. However, it became popular so fast that a lot of companies make it highly processed now- why not more and faster is best right? BUT I have heard that there still are some makers of agave with integrity. So- here's my suggestion if you love your agave: call the companies. Ask them if it's truly raw organic agave syrup or if it's processed. Not that hard right? The brand I used to use, Wholesome, is to my knowledge one of the companies that makes it highly processed.

And this goes for any product. If you buy Kashi crackers and you're questioning the canola oil... call them and ask about it! Better to know for sure what is in our food then to ignore or even deny ourselves of it if it's fine in the long run.

Smothered Chicken

Kind of like a fajita, but without the tortilla!

4 free range organic chicken breasts
1 teaspoon oregano
1/2 teaspoon sea salt
1/2 teaspoon garlic powder
1/4 teaspoon pepper
1/4 red cayenne pepper
1 tbsp organic butter
1-2 colored pepper, sliced
1-2 onion, sliced
sliced fresh organic mushrooms
1/2 cup shredded organic raw mozzarella cheese
1/2 cup shredded organic raw cheddar cheese

Drizzle some grapeseed oil in your pan, add chicken. Sprinkle with spices, cook on medium heat 8-10 minutes, turning once. Remove chicken from skillet, keep warm.

Melt butter in same skillet over medium heat. Cook pepper and onion in butter for about 5 minutes. Stir in mushrooms. Cook 3-5 minutes. Place chicken in skillet, and cover with veggies. Sprinkle cheeses on top, cover, and let stand until cheese is melted.





Oatmeal Cookies

Delicious and soft oatmeal cookies! Our favorite combo is with cinnamon and raisins. :)

3 sticks softened organic butter
1 cup xylitol plus 2 tsps molasses, mixed
1/2 cup xylitol
2 organic free range eggs
1 1/2 teaspoons vanilla extract
2 cups whole wheat flour
4 1/2 cups organic rolled oats (I didn't have enough and used half rolled and half steel cut oats and it was fine)
1/2 teaspoon sea salt
1 teaspoon baking soda
Add ins: 60% cocoa baking chips, organic raisins, dried fruits (check for added sugar and icky oils), chopped nuts, cinnamon, etc.
Preheat oven to 325-350 degrees (my oven here is like super oven so you decide)
Beat butter until fluffy, add sucanat and honey. Then eggs and vanilla. Add flour, salt and baking soda. Stir in rolled oats and extra mix ins. Drop by rounded teaspoonfuls onto greased cookie sheet (grapeseed oil) and press down gently. Bake for about 8-12 minutes and you may want to switch the baking sheets half way through. Enjoy!

Healthy Baked Ziti


Everyone loves Italian!


1 box whole wheat ziti (or whatever really)
1 lb free range beef
1 onion, minced
4+ cloves of fresh garlic
Tomato sauce, homemade or bought (Muir Glen is a great brand)
1 small tub of organic ricotta or cottage cheese
About 3 cups shredded raw mozzarella cheese
Italian seasonings
pepper
sea salt
Basil
Garlic powder
Boil pasta according to package. Drizzle some grapeseed oil in a pan and saute chopped onions and garlic. Add beef and season with spices (don't be shy!). Cook until done and remove from heat. In a baking dish, add cooked meat and pasta, ricotta or cottage cheese, tomato sauce and mix well. Spread mozz on top and bake at 375 degrees for about 20 minutes. Mmm!

Amazing Avocado


If you don't eat avocado, you should! Avocados are so full of nutrition and healthy fats that we all need. Avocado was one of my daughter's first meals! And, if money is tight for you, avocado is one of those food items that can be bought non-organic because of it's thick shell.
So I am trying to eat more of it. For myself and for the baby. I can handle eating it with just some sea salt on it, but love to try different things for variety. So here are a few creative ways to get in your avocado. If you have any ideas, I'd love to hear them! Comment!
1. Sliced with sea salt (add some salsa too if you want)
2. Guacamole, everyone loves that right?
3. On a sandwhich with turkey breast and tomato or turkey bacon, lettuce and tomato on wheat bread
4. Mixed with homemade refried beans (basically just smashed pinto beans and water) with brown rice and salt
5. Mashed and added to egg salad (see above picture)

Baked Chicken


Don't have a lot of time to prep or make a meal? Try this chicken. It takes 5 minutes to prep.

Organic free range chicken leg quarters (I prefer to remove the skin)
drizzle with grapeseed oil
season generously with pepper, sea salt, paprika, garlic salt or powder and parsley.
Bake for about 30-45 minutes on 375 degrees. Easy and delish. My favorite combination. :)

Ditch The Taco Seasoning

No need for packaged seasonings. Next time you make some tacos, try using these spices instead!

cumin
chili powder
sea salt
black pepper
coriander
paprika
turmeric
garlic powder
red cayenne pepper

Just add what you like (don't be shy) and add some water or grapeseed oil to your uncooked meat. Brown meat like normal. Now you are MSG free! Tastes even better with diced peppers and onion!!

Homemade Frozen Yogurt

Try making your own frozen yogurt for a special dessert treat! Super easy.

All you need is:

one small bag of frozen fruit such as strawberries, raspberries, peaches, etc. (organic)
and one tub of organic cream top (whole milk) vanilla yogurt (I used Stoneyfield Farms)

Blend the two until mixed in your blender then put back into the yogurt tub. Needs to freeze for several hours. And once frozen solid, you may need to take it out and let sit on the counter for a few minutes in order to scoop some out! Yum :)

*You could also use plain yogurt and sweeten it yourself with honey or stevia, etc.

Vegetarian Soup


Threw this together the other night with a few things I had on hand. Liked it. :)


1 cup raw organic kidney beans, soaked 24 hours in advance
2 cups vegetable broth
1 small can of organic tomato paste
Tomato paste can filled with water 4x
1 organic tomato, chopped
1 onion chopped
1 zucchini chopped
3-4 celery stalks chopped
crushed garlic (as much as you want)
one bunch organic kale, washed well and torn into pieces
sea salt
pepper
basil
garlic powder
(about a tsp or two of each)

Just throw everything in your pot except kale. Cover and simmer on a low boil for at least an hour so the beans will cook through. Add kale towards the end so it doesn't get soggy.
Great with some crusty bread or rolls. (Whole wheat bread recipe here)

Dana and Matt's Breakfast Delight!


Matt and I used to make this breakfast all the time when we were dating. Really, it could be a quick lunch or dinner too! It's super yummy and just fun to make. Bake it a little more and you have a breakfast pizza, bake it a little less and you can roll it up as a breakfast burrito.


Makes 2:

2 whole grain tortillas, such as Ezekiel brand
About 4 free range organic eggs scrambled
4 slices of uncured turkey bacon cooked
1 organic potato washed and sliced thin
1 onion chopped
raw cheddar cheese shredded (about 1/2 cup or so)
sea salt and pepper
Cook onions and potatoes in a pan, covered, over medium high heat. Stir often. Add salt and pepper and some grapeseed or coconut oil so it doesn't stick.
Meanwhile, scramble eggs in another pan and cook the bacon when the eggs are done.
Heat oven to 350 degrees. Place in this order on your tortilla: eggs, chopped cooked bacon, potatoes and onions, cheese. Sprinkle with salt and pepper. Bake in oven for about 15 minutes, give or take depending on how crispy you want it and if you want a pizza or a burrito. :)

Turkey Meatloaf

Super fast, you just need to do it ahead of time so it can bake for 1 1/2 hours.

1lb organic free range ground turkey (beef is fine too)
1 cup milk
1 tbsp MSG free soy sauce such as San-J Tamari
1 tsp sage
1/2 tsp sea salt
1/2 tsp ground mustard
1/4 tsp pepper
1 clove garlic minced or 1/8 tsp garlic powder
1 free range egg
1/4 cup finely chopped onion
1/2 cup whole grain bread crumbs or 3/4 cup rolled oats
3/4 cup organic ketchup

Heat oven to 350 degrees. Mix all ingredients except ketchup. Spread in an ungreased loaf pan. Bake for one hour. Remove, drain any liquid, and spread ketchup on top. Bake for an additional 15-30 minutes.
I love to serve this with mashed potatoes (organic potatoes with skins, milk, organic butter, sea salt, pepper, garlic powder) and a green vegetable.
